Banana Bread Breakfast Scramble. Loosely based on a bread pudding, this breakfast treat was easily whipped up in a skillet. It’s warm, moist, and sweet. Yum.
To make this at home, mix the following in a bowl until all liquid is absorbed by ingredients: 1 slice of lightly toasted bread torn into pieces, 1 banana – sliced, 1 tsp vanilla extract, 1 Tsp dried cranberries, ½ tsp ginger, ½ tsp cinnamon, ¼ tsp allspice, 2 Tbsp Milk (I used Vanilla Almond), ¼ c egg white, pinch of salt.
Then, cook in a skillet on medium-high heat until warmed through and it starts to brown. Remove from pan..and top with light butter, sugarfree syrup, and cinnamon sugar. Deeeee-lish!
